Clean Eating Recipe of the Week-Three Bean Turkey Stew


This stew is not only good for you, it's easy to throw together. Enjoy with a small whole grain roll and a crisp, green salad and you'll have a well-rounded, delicious meal ready in no time!

1- 15 oz. can red kidney beans, drained and rinsed
1- 15 oz. can garbanzo beans, drained and rinsed
1- 15 oz. can canellini beans, drained and rinsed
2- 28 oz. cans crushed, peeled Italian plum tomatoes
2 cups thinly sliced onions
1 cup chopped escarole
5 minced garlic cloves
1 small diced jalapeno
3 Tbsp. chopped parsley
1 Tbsp. lime juice
1/2 tsp. ground black pepper
1/4 tsp. sea salt
1 lb. lean ground turkey

1. Brown ground turkey in a skillet coated with non-stick spray, just until cooked.

2. In a crockpot combine all ingredients. Stir until ingredients are mixed. Cover and heat on high for 4 hours or on low for 8 hours.

3. Enjoy!!
