Clean Eating Recipe of the Week- Fruit & Oatmeal Cookies

Makes 24. 


I received this recipe this month in my Clean Eating Magazine newsletter. I tweaked a few things to make them my own and my kids LOVED them!


INGREDIENTS: 

 Olive oil cooking spray 

3/4 cup white whole wheat flour( I use King Arthur flour)

1 tsp baking powder 

1 tsp fine kosher salt 

1 tsp cinnamon, ground 

1/4 tsp nutmeg, ground 

1/8 tsp cloves, ground (I omitted the cloves because they can be overpowering) 

1 cup Sucanat (I used 3/4 cup agave & just 2 Tbsp. of applesauce) 

6 tbsp canola oil 

1/4 cup unsweetened applesauce 

2 large egg whites ( I used one whole egg and one egg white)

1/2 tsp pure vanilla extract 

2 cups old-fashioned oats 

1/2 cup unsweetened raisins, dried cherries, dried fruit of choice or a 

combination (large pieces coarsely chopped) ( I used dried cranberries) 


INSTRUCTIONS: 

1. Preheat oven to 375°F and lightly mist 2 baking sheets with cooking spray. 

2. In a medium bowl, combine flour, baking powder, salt, cinnamon, nutmeg and cloves. Set aside. 

3. In the bowl of an electric mixer or hand-mixer, combine Sucanat, oil, applesauce, egg whites and vanilla 

and mix on medium-high to blend well. Add flour mixture and mix on low until just short of combined. 

Add oats and dried fruit and mix until just combined. 

4. Arrange 2 tbsp-sized balls of dough with hands or spoon on prepared baking sheets, 1 1/2 inches apart. 

Flatten each ball slightly to make a cookie shape. Bake for about 12 minutes, until lightly golden. 

(I cooked them about 2 minutes less) Transfer to a wire rack to cool.

FIBER: 1 g 

SUGARS: 11 g 

PROTEIN: 2 g 

SODIUM: 90 mg 

CHOLESTEROL: 0 mg
