Makes 18 meatballs. Serving size 2 meatballs.
- 1 1/2 cups cooked quinoa
- 3 tablespoons onion flakes
- 1/2 pound lean ground beef (93%)
- 1/2 pound extra lean ground turkey
- 2 Tbsp. olive oil
- 1 egg
- 3 tablespoons dried parsley
- 1-1/2 tsp. sea salt
- 1/2 teaspoon paprika
- 1/2 teaspoon ground coriander
- 2 tsp. fresh ground black pepper
Cook the quinoa according to the instructions on the package. Mix all the ingredients in a bowl using your hands. Roll into balls and place in greased baking pan. Bake at 350° for 20 minutes or until cooked through.

Sounds delicious! I made regular old turkey meatballs yesterday, I will have to try this recipe next time. I have been looking for more ways to incorporate quinoa in my diet. Do you find that the 20 minute cook time is sufficient? Thanks.

I do find 20 minutes is enough Maria. I've overcooked it before and it gets mushy.

Just tried these and they were great! I only had ground turkey, but they were still good! I had to cook mine for 25 mins. I will be making these again. Thank you for the recipe.
ReplyDeleteYUM! I want to start using turkey and quinoa more. Have you ever tried substituting bison for the beef? I'm wondering if the cook time would be shorter since bison is leaner....
ReplyDeleteSimpleDaisy, You could totally use a meat substitute. I'm guessing the cooking time would be quite different but just test it out. Let me know how it works.

Melonie, Yes, you could easily substitute bison and that's a great idea! The cooking time would be less because of the leanness of bison. Just play with it and let me know how they turn out : )
