Clean Eating Recipe of the Week: On-the-Go Muffins

My sister-in-law called me the other day and asked for this recipe. I told her it was on my blog and then looked and realized it wasn't! I wanted to make sure I shared it with all of you. Enjoy!!

These are great, high protein muffins!


1 3/4 cup whole wheat flour
2 Tbsp brown sugar or sucanat
2 tsp baking powder
1/2 tsp sea salt
1 1/2 cup shredded low-fat cheddar
3/4 cup chopped ham, preferably a brand such as Natural Choice
1 egg, lightly beaten
1 cup skim milk
2 tbsp applesauce

Preheat oven to 400 degrees. Place paper cups in muffin tin.
In a large bowl combine flour, brown sugar, baking powder and salt. Stir in cheddar and ham.
In a separate small bowl combine egg, milk and applesauce, mix well.
Pour liquid ingredients into dry and stir until moistened. Pour batter into muffin cups to the top.
Bake for 17-20 minutes. Remove muffins from muffin pan right away and cool on a wire rack.
