Clean Eating Recipe of the Week: Almond Crusted Chicken Fingers

 

My boys are big fans of finger foods. Lucky for me, there are great Clean Eating finger foods! Here's one of their faves : )

Ingredients

  • Canola oil cooking spray
  • 1/2 cup sliced almonds or pecan pieces
  • 1/4 cup whole-wheat flour
  • 1 1/2 teaspoons paprika
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dry mustard
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground pepper
  • 1 1/2 teaspoons extra-virgin olive oil
  • 4 large egg whites
  • 1 pound chicken tenders or chicken breast cut into strips

Preparation

  1. Preheat oven to 475°F. Line a baking sheet with foil. Set a wire rack on the baking sheet.Place baking sheet with rack in the oven while it preheats.
  2. Place almonds, flour, paprika, garlic powder, dry mustard, salt and pepper in a food processor; process until the almonds are finely chopped and the paprika is mixed throughout, about 1 minute. With the motor running, drizzle in oil; process until combined. Transfer the mixture to a shallow dish.
  3. Whisk egg whites in a second shallow dish. Add chicken tenders and turn to coat. Transfer each tender to the almond mixture; turn to coat evenly. (Discard any remaining egg white and almond mixture.) Carefully remove the baking sheet from the oven and coat with cooking spray; place the tenders on the prepared rack and lightly coat tenders with cooking spray, turn and spray the other side.
  4. Bake the chicken fingers until golden brown, crispy and no longer pink in the center, 20 to 25 minutes.
These are great with Clean Eating Onion Dressing or your favorite clean eating dip! Enjoy!

Anytime Leslie! Because they're cooked on the wire rack they stay nice and crunchy without the fat.

Ooh! I'm sooo doing this one! My kids love chicken fingers! I wonder if I could use pecans instead, since I already have them. I don't see why not!

ok this is funny b/c i cannot actually see you eating these...ever. eggs and chicken. why am i convinced that you're a high raw vegan. there are high raw people who arent but i just assume you are.

Dates and people's coop. Girl. I sooo want a shopping trip to ppl's. As in, like yesterday.

ABs. Not genetic, just ridic hard training. Trust me. They didnt always look like this LOL

Yeah, you know me too well Averie! I do NOT eat these but I do make them for my hubby and boys. They really like them and they're healthy so good on them, right?

Yes, dates are my new friends. Maybe that's why I don't have abs like yours, hee, hee. Trust me, I now you are working your butt off for those abs! I doubt I could ever have them though : (
